The 100 Day Reality Challenge

I feel so busy all the time. I haven’t blogged in way too long. This is the girl who sent the message to the CCOR people to make sure that they were continuing with the blogging and the videos! I am sorry … Lydia (that’s me) and you CCOR readers.

So since the last time life has been just taking it’s course. I was on CCOR site pretty much every day but not blogging… more reading other people’s pages and saying hello’s.. would tell myself everyday … I should do a video.. I should write something but wouldn’t.

I gave my 1st Spanish talk. Woo wwooooo. I was so nervous. 5 mins up on a stage.. acting out a prepared dialogue all in Spanish. That was last Wednesday. I am happy that it’s done. Other than that.. it was actually busy at work.. many meetings and projects.

I had a wedding on Saturday. It was really beautiful. It rained a lot all day and snowed at night but everyone was just happy and ready to party! I straighten my hair at the hair dresser for the 1st time in VERY long like 7-8 years !!! That was weird.

Anyway. This is a new week. New canvas. New goals. Cleanse is done. Energy level is not exactly where I would like it to be after this long cleanse. Might have to get more blood tests. All good.

So after completing the master cleanse I have been very slightly paranoid about eating bad food. Making bad food choices. The great news is that I was barely hungry since I stopped. So eating junk wasn’t so difficult. Today I planned my breakfast and lunch and so far I’ve done amazing. Break fast was natural yogurt with a few fruits. The best was the dried blueberries in there.. Mmmm so go for me and yummy. Than lunch was a quinoa salad that I made last night. If you don’t know what Quinoa is read this:

The United Nations has even classified this super-food as a “super-crop.” Quinoa contains more protein than any other grain (an average of 16.2%, compared with 7.5% for rice, 9.9% for millet and 14% for wheat). It’s also a good source of dietary fiber and is high in magnesium, potassium and iron and a good source of phosphorous, calcium, vitamin E and several B vitamins. Quinoa is also gluten-free and easy to digest. It contains an almost perfect balance of all eight essential amino acids needed for tissue development in humans.

Quinoa is not a true cereal grain but technically a fruit of the Chenopodium family. Quinoa’s relatives include spinach, beets and Swiss chard. It is used as a grain and substituted for grains because of its cooking characteristics.

This food is not new to me. But it’s the 1st time that I make it myself. It turned out delishhh … So healthy… I did it like this.. .

cooked organic quinoa
green and red pepper
red onion
cilantro
cheek peas
chicken breast
feta cheeze
fresh lemon juice
olive oil
garlic
salt
black pepper
cayenne pepper
(ate it with some avocado pieces on top)



I have a big bowl and it’s just me. I need to bring some for my sister or something. So the goal is no eat really clean 90% of the time (quick reference... that means that if I eat 4 times a day .. 7 days = 28 meals and 25.2 of those will have to be cllleannnn so like veggies, fruits, protein etc) . I wanna eliminate white and processed things as much as possible. Also eat a low gluten diet. Need to control portions. Eat only when hungry. No eating in front of TV or PC’s… (that’s hard) Obviously drink lotssss of water and exercise + plenty sleep. If I can eat nothing for more than 10 days I sure can eat clean. Just a matter of planning and executing my meals. I will have to KICK my a** if I don’t stick to this.

Other than all this healthy goals I have going.. I want to concentrate more and meditate about my goals. My vision. Make things happen. Build that doo!!!

Oh I have to plan a salsa party! Design some flyers for this lady who asked last week. Call people I really should call more often. Complete my work project by Wednesday. Live life like today is my last!

Your blog inspired me to start a discussion on healthy recipies. Maybe it is a good idea if you would share your Quinoa Salad recipe in detail there. I'm soooo looking forward to having a bite ;-)

I LOVE quinoa, you can buy it here (the Netherlands) in health food stores. I copied your recipe, it looks delicious in the picture. I'm on my 8th day of the cleanse, so your blog about new eating habits it right on time!
